Orange-Cranberry Muffins

Yes, more muffins. Because it is fall, muffins are comforting, and they are the perfect grab-and-go breakfast for workdays!

These beauties are some of my all-time favorite, so naturally when I was walking through the grocery store and spotted cranberries, I immediately went home and made them! Orange-Cranberry muffins with an buttery, orange-infused honey. Free of gluten, dairy, soy, nuts, and refined sugars. Yeah. They’re pretty impressive!



2 cups Gluten Free Flour (Red Mill)

1 Tbsp baking powder

1 tsp salt

3/4 cup pure agave OR honey

1/2 cup Earth Balance butter

2 eggs (OR substitute 2 Tbsp of Flax Seed + 6 Tbsp boiling water)

2 Tbsp grated orange zest

2 tsp orange extract

1 cup chopped cranberries


Pre-heat your oven to 375 degrees F.

Combine the Gluten Free Flour, baking powder and salt in a bowl or Mixer, and stir until well combined. Then, add in your honey (OR agave), eggs, orange zest, orange extract and chopped cranberries. In a small bowl, melt your Earth Balance butter, and then combine with your batter mixture. Again, stir until all ingredients are well-combined (the batter will be slightly thick, but mostly moist).

Ready a muffin tin by coating the cups with cooking spray. Evenly distribute the batter into the cups – should make about 13 muffins (I know, it’s an odd number! But you don’t want to overfill your muffins so that they bake evenly).

Put the muffins in the oven for 20 minutes, or until golden brown and cooked through. To test if they are ready use a small knife or toothpick to poke the center of a muffin. If when you pull the utensil out it is clean, then your muffins are fully cooked!


**For a little extra touch of sweet, mix 1/4 cup of honey with 1 tsp orange extract, 1/4 cup fresh orange juice and 2 Tbsp of Earth Balance butter in a pot. Bring to a boil and then simmer for about 5 minutes, keeping the mixture moving constantly so as not to burn it. Take the mixture off of the heat, pour into a small bowl and place it in the fridge overnight. This makes a sweet, buttery orange-infused honey that enhances the goodness of these muffins!
