Mint Chocolate Delights

Thought I’d try something different and out of the box yesterday while baking my usual Almond Biscotti, and these delights came out of the experiment! So, I might as well call them exactly that.

Mint Chocolate Delights are a simple mint cookie dipped in melted chocolate and set to harden. They go perfectly with an afternoon cup of coffee, a cozy blanket and a good book!

Recipe

2 cups Gluten Free Flour (I use Red Mill)

2 tsp baking powder

1 tsp peppermint extract

2 eggs

2/3 cup pure honey OR agave

1 cup semi-sweet chocolate chips (I use Enjoy Life)

Directions

Pre-heat your oven to 355 degrees F.

In a large mixing bowl combine your flour and baking powder. Make a well in the middle of your flour, and combine the peppermint extract, eggs and honey. Mix the wet ingredients together well in the center before combining with the flour. Fold in the flour and mix well.

On a non-stick baking sheet, divide the dough into small pieces, roll between the palms of your hands to form a ball, then place on the baking sheet and press down gently to flatten.

Put the cookies in the oven for roughly 15 minutes, or until golden brown ad slightly cracked on top. Remove from the oven and let cool.

Use a pot (with about 2 inches of water in the bottom) and a bowl suspended over the water to melt your chocolate chips. Place the chocolate chips in the bowl and bring the pot of water to a boil. Once chocolate is melted, dip your cooled cookies in the chocolate to cover half of the cookie (OR you can spread the chocolate on top of the cookies instead).

Place the chocolate mint delights on a place and set aside (I put mine in the fridge) to harden. Serve with a warm cup of coffee and enjoy!
